350 degrees for 1 hour, 15 minutes works for me but it is extremely important that I watch where my oven racks are positioned, too high in the oven and the bottom will not bake correctly, too low and it burns before the middle it cooked through.I position my rack one notch lower than direct middle of my oven and it comes out perfectly.Test with a toothpick in several places for doneness so you don't mistakenly hit a banana piece and think it is underdone.Rating: 5 stars I have to say that if the bread seems dry and dense, chances are you stirred it too much, which is easy to do without even thinking about it.Like others, I also added some spice (vanilla, cinnimon, ginger, nutmeg and allspice).The batter yeilded 12 good sized muffins that were moist and delicious!Rating: 5 stars This recipie was great I only subsituted somthing else for each of the ingredients listed.I had no problem with it rising, and it cooked very nicely and actually a bit quicker than the recipe said!The color was gorgeous and the cinnamon chips made wonderful little cinnamony gooey spots in the bread.I also recommend that you replace some of the ingredients like I did because it makes it a lot healthier. .

I did add a couple of my favorite ingredients and it turned out oh so good.Before baking I sprinkled more chopped walnuts and brown sugar on top.The bread itself turned out to be a smaller loaf than what I've made in the past, and it was easy to make because of the few ingredients it called for.The bananas I had were quite small so I used 4, I only had self raising flour so omitted the baking powder and salt, and added 5ml of vanilla extract.I am so happy to have found this recipe....no more throwing over ripe bananas away.I followed directions exactly but only had 1/2 cup of sugar on hand but it still had just the perfect amount of sweetness thanks to the bananas!I've learned that with banana bread, if you over mix it turns out flat.Rating: 5 stars I am 85 years young and I make this banana bread for my wife who can no longer cook.I do all of the meals, but she really loves Joy's banana bread and It is so easy to make.Rating: 5 stars My wife and I love this, and we made some slight modifications which we believe incredibly enhance the original, already excellent recipe.To the batter, add 1/2 teaspoon of cinnamon and 1/2 teaspoon of vanilla extract, in addition to chopped walnuts, chopped pecans, dried cranberries, and pepitas/pumpkin seeds.Prior to pouring the batter into the loaf pan, spray cooking spray on the bottom, then rub a thin layer of butter directly from the stick.Add chopped walnuts, chopped pecans, dried cranberries, and brown sugar to cover the bottom of the pan, followed by another thin layer of cooking spray for adequate toasting.Place the pan in the oven to toast the bottom layer for 10 minutes (also at 325 degrees.). .

Rating: 5 stars With minor variations this is the recipe I've been making for 40 years.You will never find a better banana bread, and over the course of 40 years, I've never heard differently.Rating: 2 stars As other reviewers mentioned, it was very moist and the flavor was good.I ended up digging them out before eating in order to salvage the bread.butter.. and suggests using a mixer for the butter and sugar to make it light and fluffy before adding flour and other ingredients, and a full cup of mashed bananas instead of chopped up like Janet says.. more bananas and mashing them is what many of you said you did to tweak this recipe, and it is better that way.I followed the recipe as stated, with a few additions, to enhance the overall flavor of the bread.A couple suggestions...when your bananas are ripening on the counter, throw them into the freezer - skin on!All you need to do is cut the top off and squeeze the banana "pulp" into your mixing bowl.Perfect with a cold glass of milk or hot coffee or tea!It came out soft and moist (but not underdone) on the inside with a slightly crunchy exterior.The second time I made it (after writing the review), I didn't have any sour cream, and so I substituted strawberry yogurt.Rating: 5 stars With a few slight changes, this was the best banana bread I have ever tasted! .

Wife suggested needs to be sweeter stick with white sugar (however note that in many reviews of this dish a brown and white sugar mix is used and suggested).Wife thinks there's too much backing powder "I can taste it try cutting it in half".And any tricks you have to help keep a muffin from becoming a heavy blob they might need to be put in play here. .

I did tweak a little by adding vanilla, nutmeg, 1/2 cup of brown sugar and 1/2 cup of white sugar and two kinds of chocolate chips, semi sweet and dark chocolate.I added a 1/2 teaspoon more cinnamon, 2 teaspoons vanilla and used 4 bananas which I believe made it just that more moist and delicious (not to mention I had 8 bananas I wasn't going to eat and didn't want to throw away 2).I ended up making 2 loaves and added walnuts to one.Lastly, I used a metal pan coated with unsalted butter for each loaf, turned the oven off at 55-60 minutes and let it continue baking while cooling which prevented the burnt or hard outside while also not sticking to the pan.Rating: 5 stars Super moist,easy, delicious and fast !Rating: 5 stars Only change I made was to add a few dried cherries I wanted to use up.I have only ever made banana bread with oil in the batter, not butter.I know we all like to tweak recipes but my suggestion is to try it like it was written.Super moist without being smushy. .
