I always crave banana bread — moist, tender, nut-studded slabs with plenty of butter on top.That’s why I have been experimenting with creating a healthier, reduced-fat banana bread that will keep my tummy and hips happy.This banana bread is low in fat and calories yet high in fiber, protein and heart-healthy omega-3 fatty acids.Instead of fats such as butter or oil, I used healthier egg whites, low-fat buttermilk, nonfat yogurt and orange juice.To toast the oatmeal, place in a dry skillet over medium-low heat, stirring occasionally, until golden, about 3-4 minutes.In a medium size bowl, whisk the toasted oats, flours, baking soda, salt, cinnamon and nutmeg.Add buttermilk, yogurt, orange juice and vanilla; beat until batter is smooth.Lower the speed; add the orange zest and bananas, and beat briefly (it’s OK if the batter has a few lumps).Using a rubber spatula, fold in the cherries, walnuts and flax seed.Bake for 35 to 45 minutes, or until the top is a deep golden brown and a cake tester inserted into the middle comes out clean. .

I wanted to create a version at home, made from scratch, with all-natural ingredients.It is wintertime in Arizona which means that the citrus is ripe for the picking.I am surrounded by neighbors who have a plethora of fresh oranges and lemons hanging from their trees.Start with boneless skinless chicken breast or thighs .Dredge the chicken in whisked eggs and cornstarch/flour mixture until nice and coated.To make your homemade orange sauce , place orange juice, sugar, vinegar, soy sauce, garlic, ginger, and red chili flakes in a small pot and cook over medium-high heat.Once the oil is ready, in batches, cook chicken for about 2 minutes until light golden brown.Toss fried chicken with the sweet orange sauce.Top with grated orange zest and green onions.Continue to cook for 5 minutes, until the mixture begins to thicken.Once the sauce is thickened, remove from heat and add orange zest.To make chicken: Place flour and cornstarch in a shallow dish or pie plate.Working in batches, cook several chicken pieces at a time.Serve it with a sprinkling of green onion and orange zest, if so desired. .

Bring this to your next BBQ or picnic for a surprisingly spicy dessert!When I make sweet potatoes as a side dish, I add orange juice, garlic and cayenne.But when I have made sweet potato bread, it has essentially been a banana bread recipe substituting sweet potato for the bananas.I played around with the recipe to tailor it to sweet potatoes specifically.And more specifically, to incorporate the elements from the crazy hot version of sweet potatoes I tend to make.It blends the sweet/salty/spicy elements of the side dish but in quick bread form.The bread itself has a light chili flavor with a strong cayenne kick from the candied pecan topping.Bring to a simmer, mix in pecans and reduce heat.Blend together all bread ingredients in a mixing bowl (I don't bother with separately mixing wet/dry ingredients steps for quick breads).Pour batter into lightly greased bread pan.Now that the pecans have dried a little, break them up and put the pieces on top of the batter.You will have more than enough pecans to cover the top, so press them them down into batter until they are all used. .
