So I had a great idea today – I thought I would make banana bread and add raspberries to it. As I was googling my way through banana bread recipes I came across the creation itself – by no other than Donna Hay.

I love banana bread so eating it with raspberries was a little different – in a good way. Fold through flour, vanilla, baking powder and baking soda. Add the maple syrup, banana and raspberries and gently fold through to combine. .

A few overripe bananas sitting on the countertop was the nudge needed to finally get around to trying a recipe from Donna Hays “Basic to Brilliance” cookbook. The banana bread recipe is straight forward, simply measuring and weighing ingredients , mashing bananas with a fork and mixing all the ingredients together in a bowl.

One step puzzled me… after weighing and mixing the banana bread ingredients together, the next step mentioned was to pre-heat the oven and line the loaf tin! I had already pre-heated the oven so left the banana bread mixture sit for ten minutes before pouring into the loaf tin and placing the extra banana on top. The banana didn’t sink and the bread came out just fine, lovely and moist. .

I bought bananas before going into lockdown not with the intention of eating them, but with the intention of baking with them. They were prime ripeness for banana bread. I wasn’t sure what recipe to follow this time, it was a choice between a Donna Hay one (using more bananas) and my aunty’s one (using less bananas). I went with the Donna Hay one and added an extra banana on top for decoration.

I still have one super ripe banana left so I’m thinking it might end up in a pancake batter with protein powder to be healthy. .

I was fortunate enough to receive Donna Hay’s latest recipe book (Fresh & Light) earlier this month as a birthday present. Her recipes are always simple (not too many ingredients) and easy to follow, encouraging you to mix and match ingredients and learn about the basics to then explore.

Her latest book is full of fresh healthy food offerings really tapping into some tasty ingredients that I love to use. And so first cab off the rank was a wonderfully light Banana, Mango and Banana Bread.

Spoon your mixture into a loaf tin and then add your remaining apricots along the peak of the loaf for decoration. .
