If you’ve been following Smitten Kitchen outside this url recently, you might have noticed that a terrible, dangerous thing has happened: I revisited the epic, consummate even, chocolate chip cookies from David Leite via The New York Times, mostly because I was tired of looking at the unpalatably blueberry-ish photo of them atop the 2008 post, and eight years later, in basically the rom-com of cookie sagas, realized the thing I wanted most in a chocolate chip cookie was was there the whole time. They used expensive chocolate, demanded planning ahead and were in every way the very opposite of this salted chocolate chunk cookie, which I have since considered my go-to. Sometimes life requires a 5-inch chocolate chip cookie because there are things that only a 5-inch chocolate chip cookie can do.

Only a 5-inch chocolate chip cookie can have three distinct textures in one face-sized disc: deep, undeniably excellent crunchy edges, chewy and/or gooey everywhere else. Only 5-inch chocolate chip cookies are the mic drop of the category: you bring them out and everything else stops to take in this magnificence on a plate.

If you have a pulse and an Instagram account, or engage with food media in any capacity, you’re probably already well-aware of the internet craze that is Alison Roman’s salted butter chocolate chunk shortbread cookies. The recipe is incredibly simple — mostly butter, sugar and chocolate — but a little more complicated if you don’t have the right equipment. We got creative and used two wooden spoons, and then ultimately two forks, to help the dough come together, and we used a basic sea salt grinder in lieu of flaky sea salt to finish.

The buttery crumb of a shortbread, the melty chocolate of a childhood favorite, and a touch of salt because we’re sophisticated! Sprinkle with sea salt. .

I suppose there comes a point in every food blogger’s so-called “career” when she posts her favorite chocolate cookie recipe, but I’ve avoided this point for a long time because, does the internet actually need another chocolate chip cookie recipe? No, not Alex, though he did bake the cookies while I washed dishes on Sunday (see how we switched it up there? But the single dish I did not expect to make were these cookies and their full title — Salted Butter Salted Butter and Chocolate Chunk Shortbread, or Why Would I Make Another Chocolate Chip Cookie Ever Again? She says she’s always found chocolate chip cookies to be “deeply flawed” — “too sweet, too soft, or with too much chocolate.” She thinks “there’s a lot of room for improvement.” I am that scream emoji. Roman instead took all of her favorite parts of classic chocolate chip cookies to invent something else entirely.

First, she uses lots of salted butter; she says that while she prefers unsalted butter in almost all baking, here, it’s deeper flavor and saltiness, add more complexity than just adding salt to unsalted butter. There’s just enough flour to hold it together, just enough brown sugar to suggest a chocolate chip cookie, and chunks of irregular chocolate pieces to “prevent chip congregation” (although, warmly, let me suggest that only a monster could hate such a thing).
