Milk Bar is a New York City institution helmed by chef Christina Tosi. She is the visionary creative mastermind behind Cereal Milk Ice Cream and of course the incredible Compost Cookies.During my brief residence in NYC I was lucky enough to visit the infamous Milk Bar Bakery on multiple occasions.Milk Bar is famous for its outside-of-the-box approach to baked goods and other desserts.Christina Tosi is also quite generous with her brilliance, and has published several cookbooks with cherished recipes from the brand. My absolute favorite Salted Chocolate Chip Cookies are a slight variation on Tosi's perfect recipe.I tasted a few of Milk Bar's other creations over the years, but the truly unique and playful Compost Cookies are personal favorites.Terms like "kitchen sink," "garbage," and in this case "compost" sometimes describe a recipe where you add everything you can find. You can easily create the tried and true Compost Cookies that helped put Milk Bar on the map.: Both the Milk Bar staff and I recommend Cape Cod Potato Chips. The original recipe specifies heavy cream, but I used milk and it was just fine.In the bowl of your electric mixer fitted with the paddle attachment, beat together a couple sticks of room temperature unsalted butter, granulated sugar, and light brown sugar. Then add an egg and vanilla extract and beat until fluffy and pale.Scrape down the sides and add your first batch of mix-ins: chocolate and butterscotch chips, rolled oats, the reserved Graham Crust, and coffee grounds.Mix on low for 30 seconds, then add mini pretzels and potato chips. For portioning the cookies, I use this Oxo ice cream scoop which is a #12 size, with a 2 ½ ounce capacity.Pat the tops of the cookie domes flat and cover with plastic wrap. The 16 minute tray was crisp at the edges but chewier in the middle, with occasional crunchy bites throughout from the pretzels and potato chips. While you can certainly make smaller cookies, you will likely need to break up the pretzels and potato chips a bit more to do so.When eating the cookies, you definitely get a nice butterscotch flavor with a generous side of chocolate. The potato chips and pretzels provide a nice crunch while the majority of the cookie (minus the crispy edges) is chewy. Please leave a star ⭐️⭐️⭐️⭐️⭐️ rating in the recipe card below and/or a review in the comments section further down the page. .

And yet these confections, along with pouches of Big League Chew, are among the first things one might encounter at Milk Bar’s newest and most corporate New York location, inside the Ace Hotel in Nomad.Milk Bar founder Christina Tosi, whose success and TV exposure has turned her into one of the country’s most recognizable culinary figures, has a track record of branding her populist creations, complete with registered trademarks. The excellent green ones taste like an Andes mint chocolate crossed with malted milk balls, while the dusty cinnamon variety packs a stronger crunch, employing a pleasantly bitter version of the spice. What was once a cool East Village hangout peddling egg sandwiches alongside cereal-flavored milk has become a national chain with shiny flagships in Melrose, Los Angeles; Washington, D.C.; and here, in Manhattan.Rather than follow in prevailing European pastry traditions, the Northern Virginia native channels 1980s suburban nostalgia and a love for junk food into balanced, salty, multi-textured sweets.Milk Bar is like Norman Rockwell’s “Freedom From Want” (1943), except with cameos from the Keebler Elves, Ferris Bueller, Molly Ringwald, and a horribly stoned Tony the Tiger.Anyone who’s ever encountered a bagel bite at a coffee chain, “Fruit Loop”-flavored ice cream at a grocery store, or unironic funfetti desserts can send Tosi a thank-you note.Tosi has compared the 4,000-square-foot space to a daytime “slumber party,” while the venue flaunts a high school cafeteria vibe, replete with plastic trays and communal benches.Children sometimes fill the room, pressing their faces against the sneeze guard glass for custom 8-inch cookies ($40) or bespoke cakes ($65), all with Milk Bar’s famously unfinished exteriors. But as the burgeoning chain standardizes its production line, birthday-flavored items — indulgences laced with sprinkles and scented with a strain of vanilla that’s more candy store than creme brulee — now occupy a frightening portion of the flagship menu.A birthday latte tastes like what would happen if a barista accidentally poured half a cup of artificial vanilla syrup into milk-colored hot water and forgot to add coffee.Milk Bar’s first location, in the East Village, once served one of the city’s greatest sandwiches: a poached egg that had been deep-fried and plopped on an English muffin slicked with onions and bacon. For those of us who remember the glory days of Milk Bar in the East Village, the new flagship feels like walking through a joint outpost of a Hudson News and a commercial bakery at JFK.There’s also something ironic about the fact that we live in a city where certain local supermarkets sell tasty snacks from small purveyors, while Milk Bar, once an underdog, now hawks endless variations on birthday cake — and Reese’s candies. .

The ones chocked full of mix-ins and add-ins that generally look like they’ll overwhelm the cookie dough but turn out to be pretty darn fantastic?Graham cracker crumbs, pretzels, potato chips, chocolate and butterscotch chips, oats, and ground coffee are all mixed into a fairly basic cookie dough and yield a giant compost cookie that made my sweet tooth so very happy.Chocked full of chocolate, it’s richness demands an ice cold glass of milk.Another unconventional ingredient for cookies, crispy cornflakes add a great crunch alongside sweet marshmallows and chocolate chips. .
