One vivid memory, one that I can pull up at any time, is of me walking into our kitchen after getting off the bus at the end of the school day.I opened the door into the house and instantly smelled butter, and chocolate, and something special.My mom was right there in the kitchen waiting for me, standing next to a cooling rack piled high with fresh-baked cookies.Not that it wasn’t perfectly great, but it’s not exactly a “life changing moment”…or maybe it was, and I just didn’t realize it.I wonder now if I’d had a really rotten day at school, or if something happened on the bus ride home, and that’s why the memory of my mom stuck so solidly in my head.Once the dough came together, I added in a bag of semi-sweet chocolate chips and gave them a good stir in the mixer.I scooped half of the cookie dough out and carefully spread it out to fill the bottom of my prepared baking dish.Melt it slow, and steady, stirring all the while and before long, you can easily pour it over the top of your cookie dough in the pan.You don’t need a ton, but a little salt goes a long way in bringing what could be just a better-than-average cookie bar up a notch in greatness!Once the cookie dough is all nestled in, it’s time to pop these sweet little devils in the oven for about 25 minutes.Once they’re toasty brown, and the center is set, you can remove them from the oven and finish them off with another sprinkle of flaky salt. .

It combines two of my favorite comforts: peanut butter and soft, gooey caramel.Put them together and you get rich caramel stuffed cookie bars – there’s nothing much more comforting than that!I’m sharing my tips for making caramel that stays gooey and soft – even after baking the bars.Also, the caramel stays inside the bars – ever make a recipe where is oozes out and burns onto the baking pan?Peanut butter cookie bars stuffed with the perfect soft caramel recipe is a treat no one can resist.For the bars, you will make a peanut butter cookie base that is soft and chewy once it’s baked.Once you make the dough you will divide it into two parts so you can create a sandwich with the caramel in the center.Add the egg, vanilla, milk, salt and baking soda and mix until combined.Line a 9×13” baking pan with foil and the press half of the cookie dough into the bottom.While the bottom cookie layer is baking, make the caramel sauce.Turn the heat to low and keep stirring the caramel until the bottom cookie layer is done baking.Pour the caramel over the top of the bottom cookie layer leaving a 1/2” border.You don’t want to spread the caramel all the way to the edges, otherwise it will leak out when you bake the bars and burn on the sides of the pan.To make the top cookie layer, break of pieces of the remaining dough and flatten them between your hand.Bake the bars for 10 to 15 minutes or until they start to turn golden brown on top.It’s not hard to do, but it’s important to have your ingredients prepped and ready before you start making these peanut butter caramel bars.Unwrap all of the caramels before you make the peanut butter cookie dough.Make sure to keep the caramel layer in from the edges of the bars, about ¼ to ½”.You want to be able to seal the cookie layers together and if the caramel touches the pan it will bubble and stick.Definitely wait for the bars to cool – it you bite in to one hot from the oven (tempting, I know!).Store these peanut butter cookie bars in an air tight container at room temperature.Turn heat all the way to low until the bottom layer is done cooking, stirring often so it doesn’t burn.Right before taking the cookie out of the oven, turn off the heat and stir in the vanilla.After 10 minutes, remove the bottom layer from the oven and pour the caramel over the top.Continue until the entire pan is covered, pressing the edges to seal them together.Bake for an additional 10-15 minutes, until the bars start to get golden on the top.Make the easiest Peanut Butter Cookie bars stuffed with caramel!These easy bar cookies have creamy caramel stuffed inside with a secret ingredient to make it stay smooth. .
