I’ve always been curious whether graham crackers are really the same thing as digestive biscuits.One of my daughter’s friends, who left England to live in the US, recently came back for a visit and told me that graham crackers tasted completely different to digestive biscuits.I mean, could I have been missing out on an amazing graham cracker crust for pies and cheesecakes all these years?You can even use these crackers crumbled up to make these fabulous key lime cheesecake bars. .
One of our favorite snacks while living there was milk chocolate Digestives and we invariably kept a package in our flat.We walked an average of seven miles daily and, along with grapes and cheese; we took a stash of Digestives with us on our adventures.Digestives aren’t too sweet, are very similar to graham crackers and the chocolate-covered variety work perfectly for Easy S’mores.I first saw this idea on Barefoot Contessa but wasn’t convinced a S’more could be as tasty without the Hershey Chocolate candy bar.I almost feel like a traitor, a double-crosser a two-timing rat suggesting we change the way America’s favorite campfire treat is made.I rationalize my behavior in this way; Easy S’mores are just as delicious, less messy and are simpler to make than the original.I have pledged as a former Girl Scout to be honest and fair and to make the world a better place.Recipe Notes McVities Milk-Chocolate Digestives work well and can be found at Wal-mart, Whole Foods and World Market. .
They do not have anything like graham crackers here, and I could really use them for a couple recipes I'm developing. .
Graham Crackers (vegan option)
Light, crisp and sweet with a hint of spices to balance them, these graham crackers are surprisingly easy to make and very moreish!Whenever we visit the States, my mum and I always buy a box of Graham crackers to snack on (and some to bring home to the UK!).In cheesecake bases where recipes indicate using graham cracker crumbs, we would typically use digestive biscuits.I’ve used golden syrup in these crackers instead of honey as I prefer the flavour and I like the very crisp texture you get in the end.A dough is formed from dry ingredients of the whole wheat flour, cinnamon, salt, sugar and raising agents.I add a lil bit of ground cardamom to the dough as well for a slightly spicy, background note.That helps to give a nice ‘short’ (i.e. crumbly, snappy) texture to the crackers and prevents them becoming chewy.Once baked, you can finally snap the huge cracker along the score lines into lil squares! .
