Last week I was gifted a bottle of Nellie’s Key Lime juice and tried it with great results plus it saved a lot of time.I have made in wider/shallower disposable tart liners but next time will make as shown just to have in the freezer.Followed advice of @PLN from Oak Park and made it all in the food processor.Instead I simply cut up into a tiny checkerboard and added to the running dood processor.My only complaint is that it only made 9 mini tarts — perhaps my silicone cupcake mold is deeper than others.I didn’t bother with piping the batter just carefully spooning it in the paper muffin tin cups.First: with the machine running, pour in the whipping cream and process until almost firm.Add powdered sugar and process till it forms stiff peaks.No need to wash the bowl, just add the graham crackers and process till crumbs.Add the butter and honey and pulse till combined.Once again, no need to wash the bowl, just proceed with the filling ingredients and continue with the rest of the recipe.Have varied the recipe using toasted coconut in filling and eliminating lime zest and juice--also excellent.Could easily replace graham cracker crumbs/honey/butter with very thin wafer cookie.I read everyones review so I tried to be organized and not make such a mess.I will definitely make again, but please note: I used my food processor, my stand up mixer, and my hand beaters.The yield on the graham cracker crust was a lot...I had a bunch left over, even after weighing exactly 8 ounces/1 cup for the crumbs and measuring each 1.5 T for the individual pies.Definitely chill the batter for a bit (I did 15 mins) before piping into the muffin tin; too runny otherwise.I look forward to making them again and just having them in the freezer for quick dessert when company comes at the last minute.- the "batter" is really too runny to put straight into the pastry bag.It benefits from 5-10 minutes of refrigeration to become slightly more solid so it doesn't run out the bottom (or fall out the top).- measure your graham cracker crumbs to ensure it is a cup. .
