In 2-quart saucepan, heat cream and vanilla bean (if using vanilla, add at the end) just to boiling over low heat. Blend yolk mixture into cream in saucepan; cook over low heat about 10 minutes, stirring constantly, until custard coats a spoon. Remove vanilla bean and scrape seeds into sauce.
Cool 5 minutes. Carefully remove tart shells from muffin cups. .
Sweet Tart Crust
Buttery, crispy, crumbly tart crust that goes well with any filling. Tart dough is a bit different than pie dough, which is more flaky and tender, so don’t confuse the two. Different recipes use different amounts of sugar, but I find this one to be just perfect for a sweet crust.
