How Long Do Tart Shells Last

Make-ahead tartlet shellsI'm looking for a recipe for tartlet shells that can be made ahead by at least two days (the longer the better though!) and that are shelf-stable - no freezer space available. The finished shells will be approximately 2" across and will be filled with fruit jam the morning of.
I'd prefer a classic pie or tart dough, but would also consider shortbread or something less traditional if there's a big difference in how well it can be made ahead. .
How To Make Freeze-and-Bake Tart Shells
Roll out the dough: Dust the work surface lightly with a few pinches of flour. Remove 1 dough portion from the refrigerator, unwrap, place on the work surface, and dust the top with a pinch of flour. With a rolling pin, roll the dough away from yourself, in one direction, to form an oval. If it sticks, lift that section carefully with a pastry scraper and throw a pinch of flour under it. If your tart pans are 4 3/4 inches wide, the dough should be about 7 3/4 inches wide; if your tart pans are 4 inches wide, the dough should be about be about 7 inches wide. .
