What's in Season? Cherries
Sweet cherries are the larger, plump and deep red varieties generally sold fresh in grocery stores and through farmers markets in the summer.Their namesake tartness mellows into a deep, sweet flavour making them a delicious choice for processed cherry products.Wash your cherries before eating in cool water and drain on a single layer of paper towel.Freeze on a cookie sheet in a single layer for four hours then transfer to a freezer bag or sealed container.Sour cherries are more suitable for cooked preparations and lend themselves well to pies, jams, preserves and fruit compotes to top pancakes and ice cream.The cherries are handpicked and transported to a packing facility where they are washed and sorted to discard any damaged or unripened fruit.Once at the processing facility, the bins are filled with ice water to keep the cherries cool and let leaves, branches and bits of floating debris be skimmed off.They are then moved by conveyor through a colour sorting machine that removes unripe or damaged cherries which are sent to be made into juice.The whole process is continually monitored by staff who remove undesirable cherries and take samples to ensure quality. .

When Does Cherry Season Begin (and End)?

You can soon pick-your-own cherries at a farm in Ontario
The cherry and peach farm is an hour and a half drive outside of Toronto, in the town of Grimsby. .
So enamored by sunset-splattered peaches and striped red watermelon, it wasn’t until I plunged into David Lynch’s 90s cult series Twin Peaks that cherries—specifically “damn fine cherry pie”—caught my attention.Now a summer doesn’t go by without me stuffing my face with slices of oozy, viscous double-crust cherry pies.It’s easy to spot sour cherries from their sweet counterparts, as they’re smaller, rounder, and generally brighter in color.Look for cherries that are deep scarlet with green stems intact, which help to keep them fresh for longer.In fact, cherries need cold temperatures to stay fresh, so store them (unwashed) in the fridge, where they’ll keep for up to one week.Since they can absorb the flavor and odor of surrounding food items, it’s best to store them in an airtight container—no one likes a cherry with traces of garlic or onion!Dehydrating cherries on the other hand is a whole-day activity, but the reward of keeping a taste of summer in your pantry is, in my opinion, very worth it.But they can also be boiled and simmered down into a thick, jammy sauce that’s sweet and snappy—the perfect accompaniment for grilled meats, vegetables, and even salads.Their tanginess makes them a great addition to cocktails, though I suggest muddling them with some sugar to mellow out their sharpness. .

Cherries are categorized as either “sweet” or “sour” varieties (although some crosses have been created forming a “sweet-sour” category).Sour Cherries are small, bright and uniformly red with thin skins and are most often used for cooking, preserves and pies.This chemical is the cause of your red urine after eating beets; but on a positive note, some studies have shown that betalains (including betacyanin) is a natural antioxidant and exhibits anti-cancer activity.To preserve colour and nutrients, Beets should never be cut or peeled before cooking in liquid; they will “bleed” and turn dull brown.If you really want to get creative, make a borscht – a hearty Eastern European soup… just Google a recipe; you can’t go wrong.Unfortunately, Tomatoes were the first genetically engineered food approved by the USDA – the purpose of which was to make them ripen on the vine longer, remain firm enough to ship cross-country and look perfect.This increased supply means that, in addition to farmers’ markets and upscale vendors, you will find these Tomatoes in the produce aisle of some chain supermarkets.While location, farm management and Mother Nature will all influence quality and consistency, these Tomatoes are generally more flavourful than the Hothouse rendition.The petite Green Zebra is perhaps less richly endowed, but has good sweetness and a crisply defined , vibrant character.As these big beauties ripen, they turn deep yellow to orange with a sunburst of bright red streaming out from the blossom end.At their best, they are fleshy, sweet and succulent with sufficient acidity, and require no more adornment than a sprinkle of seas salt.Our favourite Heirloom variety is Black Fingerling, which has a deep purple firm flesh and memorable earthy flavour; finely dice this delicacy for the illusion of fancy truffles.That means stay away from Granny Smiths (an Australian native) and Pink Ladies – both of which are always imports.It’s a cross between a Macoun and a Honeygold and grows best in cooler climates like ours (Canada) – expect explosive crispness and mild, honeyed flavour.Other Ontario varieties include Cortland, Crispin, Fuji, Gala, Idared, Northern Spy, Russet and Spartan.Look for firm, dense bunches of Nappa and Bok Choy with smooth stems and unwilted leaves. .
